  • 1 Fennel Bulb

  • Seed Cycle to garnish
  • 1/2 cup RK Superb Seasoning Mix
  • 1/3 cup Cornflour
  • 4 slices of day-old sourdough bread, processed into breadcrumbs
  • 2 eggs
  • 1/2 cup coconut oil

Dressing:

  • 6 tbsp EVOO
  • 2 tbsp Balsamic Vinegar
  • 2 tbsp Orange juice
  • 1 tbsp Honey
  • Salt & Pepper

Method

  1. Begin by preparing the squid. Clean and slice it into rings or strips as per preference.
  2. In a mixing bowl, combine the squid with cornflour, breadcumbs and Superb Seasoning Mix.
  3. Dip the squid into beaten eggs, followed by the flour mix, ensuring a coating on all sides.
  4. Heat coconut oil in a pan and fry the squid until golden and crispy. Set aside to cool.
  5. Meanwhile, prepare the salad ingredients: segment the oranges, slice the fennel, and chop the rocket and dill.
  6. Whisk together the dressing ingredients in a small bowl.
  7. In a large serving dish, arrange the rocket, citrus segments, sliced fennel, and crispy calamari.
  8. Drizzle the dressing over the salad, garnish with dill and Seed Cycle, and serve immediately.
